These are the Weschenfelder 50/55 beef middle casings. They comes salted in a vacuum pack. Each pack contains 9 metres and they are Ideal for making all sorts of charcuterie including salami.

These are the 50/55 natural Beef Middle casings, which are traditionally used for Salami and other charcuterie products. They are straight and do not curve, making them easier to hang and more space-efficient.
They come in 9-metre packs, producing 16kg (35lb) of sausage. Our Beef casings are specifically imported from South America, and the beef middles are Uruguayan in origin. The beef middles are strong-walled and easy to use for various air-dried products.
These casings come vac-packed and preserved in salt. We recommend they be stored in a sealed 'Tupperware' type container in a fridge, where they will keep for at least 3-4 months. Before use, they need to have the salt rinsed from them and then soaked in warm water for at least 1 hour or preferably overnight.
