These are the 50/55 Butchers Pack of natural Beef Middle Casings. They come in packs of 10 which are packed conveniently into a white sealed bucket making them very easy for storage and use.
These casings are traditionally used for making Salami, Cornish hog's pudding, or Cervetlat amongst other air-dried products. This is a straight casing with no curve, making it easier to hang and more space-efficient.
Our Beef casings are specifically imported from South America with the beef middles being of Uruguayan origin. They really are top quality beef middles that are strong-walled and easy to use for an array of air-dried products.
Each hank is 9 metres and will make approx. 9kg of sausage. Before use, they need to have the salt rinsed from them and then soaked in warm water for at least 1 hour or preferably overnight prior to use.
