Product Details

Dry ageing collagen sheets are used to wrap meat during the drying and curing process. Typically used for whole muscle meats such as prosciutto, capocollo, pancetta, and dry-cured ham. The collagen sheets can stick to the meat surface yet still allow for moisture to be released and smoke to penetrate. It provides a physical barrier against outside air and contaminants while the meat is being dry-cured whilst also retaining breathability.

The sheets adheres to the meat and allows for breathability while drying and smoke penetration for adding smokey flavour. The sheets contain tiny perforations for permeability and are designed to “wrap” around your meat and create a “skin-like membrane” which will protect your meat and regulate its drying. The moisture loss from your cured meat is evenly distributed through the series of tiny perforations in the wrap. Unlike regular casings which have a predetermined size, you can ensure your whole muscle joint is wrapped with no air pockets.

These collagen sheets are large offering users room to cut the sheets using scissors into halves and even quarters to wrap the meat, ensuring you can get a neat finish on your product.

For best Practice follow these top tips:

- Wrap a collagen sheet around your meat to remove air pockets with a bit of an overlap.

- Before wrapping ensure your meat is a bit tacky to provide sufficient surface for the wrap to cling on to and form a skin membrane.

- Use butcher twine or netting to secure the wrap to the muscle.

- Prick your muscles with a sausage pricker to remove any remaining air pockets.

- To remove the casings simply peel it off. You can also soak your muscle in warm water for 60 - 90 seconds to soften the collagen casing up.
