Based on a traditional recipe shared by a friend supplying the Moroccan expatriate community in Brussels, this seasoning stays true to its roots while being simple to use in any butchery or home production setting. The result is a vibrant sausage with an unmistakable deep red colour, fragrant spice profile and succulent finish, reminiscent of the Merguez found sizzling on the streets of Marrakesh.

A long-standing favourite with our customers, this seasoning is ideal for butchers, farm shops, game dealers and home sausage makers looking to offer an authentic alternative to traditional pork sausages.

Recommended Recipe

For the most authentic flavour, we recommend using: 50% Lamb 50% Beef However, the recipe is extremely versatile. You can increase the lamb content to 70% or even produce an all-lamb Merguez if preferred.

Add per kilo of meat the following; Merguez seasoning 33 grams (3.3%), Water 50ml, Mince the meat through a 6mm or 4.5mm plate.

Add the seasonings and water and mix well. For a classic-looking merguez, Stuff into a Weschenfelder sheep casing or a collagen 23mm casing.
