This pack contains everything you need to make your own Salami. Included in the kit is a Curing Salt that has been produced specifically for non-cooked dry cured products such as Salami or Chorizo, The curing salt produces a beautifully cured end product when you follow the recipe and instructions.
We advise to use:
- The curing salt at 28g per kilo of meat.
- The Parmanello Italian Salami Seasoning at a rate of 15g per kilo of meat.
- The Bessastart Culture that 'kick-starts' the whole process of fermentation and maturation at a rate of 0.6g per kilo of meat.
- Beef Middles which are ideal casings for salami.
