These are the 50/55 Butchers Pack of natural Beef Middle Casings. They come in packs of 10 and are conveniently packed into a white sealed bucket, making them very easy to store and use.
These casings are traditionally used to make salami and other charcuterie products. They produce a straight product with no curve, making hanging easier and more space-efficient.
Our Beef casings are specifically imported from South America, and the beef middles are of Uruguayan origin. They are top-quality beef middles that are strong-walled and easy to use for an array of air-dried products.
Before use, the hanks must be rinsed of salt and soaked in warm water for at least 3-4 hours or preferably overnight.
Each bundle of 9 metres long and will make approximately 16kg (35lb) of produce meaning this butcher pack of beef middles will make 160kg of product.
