Easy Argentinian Chimichurri Sauce

This is a recipe for making an authentic Chimichurri sauce. This classic South American herb sauce balances a rich steak perfectly, but it works with lots of other grilled foods. Think BBQ - Kebabs, grilled chicken, lamb chops. This sauce is perfect for all that.

What is Chimichurri? 

Chimichurri is a fresh, tangy, and delicious sauce. It is made using chopped fresh parsley, oregano, garlic, olive oil, vinegar, and red pepper flakes. It is a colourful addition to any plate and only takes 10-15mins to make.

The variations of chimichurri is endless as with all recipes, people add their own signature flavours to it over time. It's an Argentinean sauce or condiment, similar to pesto, that is popular throughout South America.

 


INGREDIENTS

1 large onion

1 bunch parsley

2 tablespoons of oregano leaves (dried oregano is fine)

6 cloves garlic

 Red pepper flakes (You can use a blender)

Lemon juice from 2 large lemons

1 bunch thyme (best if fresh)

450ml olive oil

salt and pepper for seasoning

 

UTENSILS

1 empty wine bottle and a cork


METHOD

Finely chop the parsley, onion, thyme, fresh oregano, red pepper flakes and garlic (or process these in a food processor for several pulses). Place in a small bowl.

Stir in the olive oil, lemon juice, salt, pepper, and red pepper flakes. Adjust seasonings with salt and pepper.

Serve immediately or refrigerate. If chilled, return to room temperature before serving. Can keep it for 7 days.
