These extra-large beef caps have a beautiful white creamy colour ideal for whole muscle joints such as mortadella, coppa, capicola and bologna.
Produced in Uruguay, these caps also known as ox bungs have a reputation in the industry for being thick-walled and very easy to use.
Supplied in a net of 10, salted in a tamper-proof sealed bucket.
Each cap has a filling capacity of between 8-10kg and a shelf life is around 6-12 months.
Before use, soak in warm water for 4-6 hours or overnight.
