The first thing you notice when adding this mix to your sausage meat is the smoky scents, which is balanced out by the freshness of the garlic and fennel. The mix also has chilli in it which isn't overpowering and gives your sausage a subtle yet spicy kick.
For a great tasting Louisiana sausage, use this mix with pork or beef at a 10-15% fat ratio.
