    These are the 50/55 natural Beef Middle casings and are used as a traditional casing for Salami, Cornish hog's pudding, or Cervetlat. This is a straight casing with no curve, making it easier to hang and more space-efficient. They come in metre packs, which will produce 9kg (20lb) of sausage. Our Beef casings are specifically imported from South America with the beef middles being of Uruguayan origin.     These are the 60/65 natural Beef Middle casings and are used as a traditional casing for Salami, Cornish hog's pudding, or Cervetlat. This is a straight casing with no curve, making it easier to hang and saves on space. With a calibre of 60/65mm, these casings will make a beautiful wide salami. Great for adding a new dimension to any charcuterie board, Each pack contains 9 metres of beef middles and will make approx. 11kg (25lb) of sausage. Our Beef Casings are specially imported from South America with the Beef Middles being of Uruguayan origin. They are high-quality Class 1A middles that are strong-walled and easy to use, making them ideal for Salami and other air-dried products. These beef casings come vac-packed and cured in salt. We recommend they are stored in a sealed 'Tupperware' type container in a fridge, where they will keep for at least 3-6 months. Before use, they need to have the salt rinsed from them and then soaked in warm water for at least 1 hour or better overnight prior to use.     These are the beef caps or ox bungs as they say in Scotland. Each pack has 2 x Beef Caps each will make approximately 2-3kg of Haggis. Each Cap is approx. 80cm wide and 1mtr long. With an open-end and cap-end, these casings can be filled to the desired amount, then tied with string before cooking. These casings are not only used for making Haggis but also can be used for continental charcuterie such as Mortadella. If you would like to make your own Haggis, check out our Haggis making kit (in the seasonings category) which includes a complete seasoning mix, so all you need to add are the 'tops' (lungs, heart, and liver) and suet. All our Natural Casings come in easy to use packs and are cured in salt before dispatch.
