These are the 60/65 natural Beef Middle casings and are used as a traditional casing for Salami, Cornish hog's pudding, or Cervetlat. This is a straight casing with no curve, making it easier to hang and saves on space. With a calibre of 60/65mm, these casings will make a beautiful wide salami. Great for adding a new dimension to any charcuterie board, Each pack contains 9 metres of beef middles and will make approx. 11kg (25lb) of sausage.
Our Beef Casings are specially imported from South America with the Beef Middles being of Uruguayan origin. They are high-quality Class 1A middles that are strong-walled and easy to use, making them ideal for Salami and other air-dried products.
These beef casings come vac-packed and cured in salt. We recommend they are stored in a sealed 'Tupperware' type container in a fridge, where they will keep for at least 3-6 months. Before use, they need to have the salt rinsed from them and then soaked in warm water for at least 1 hour or better overnight prior to use.
