Pheasant Sausage We are often asked for recipes for a good Pheasant sausage...as a way of using up all that surplus pheasant meat !! This recipe was given to us by a customer a couple of years ago as tried & tested way of using up Pheasant breasts. 4lbs Pheasant, 4 Tablespoons Red Wine (or Orange Juice as a good substitute) , Half Teaspoon Salt, half teaspoon White Pepper, half teaspoon melted butter, & add a pinch or two of Oregano to taste.
