3lbs Lean Pork Shoulder 1lb Lean Beef Chuck 0.5lbs Veal 0.5lbs Pork Fat.....Back Fat preferably 2.5 teaspoons Salt 3 teaspoons ground black pepper 2 teaspoons ground marjoram 2 teaspoons sweet paprika 0.5 teaspoons ground allspice 3 cloves finely minced garlic Grind the meat through a coarse plate...6 or 8mm .. & after thoroughly mixing the salt ,spices, herbs & garlic ....stuff into a Hog Casing or 28mm Collagen Casing & leave in long lengths.
