Butchery Courses at Lishman's of Ilkley North Yorks

We organize several Sausage Making courses each year and the next one is due in July with a date and venue to be confirmed, but i also get many calls about Butchery courses as well. One of our Butcher customers has started doing day courses in general Butchery skills and we have already heard great feed-back from the first sessions. David Lishman is a Q Guild Butcher in Ilkley North Yorks and winner of just about every Butchers award possible, as well as guest judge on the recent BBC3 Butchers Apprentice of the Year programme.

Hung Sausage - Election News

I knew this Election would in the end all come down to sausages!  Interviewed by Jeremy Paxman, Boris Johnson declared that whatever type of '' Wall's Sausage was contrived then the dominent ingredient  had to be Conservative'' , to which Paxman joked that it all depended whether it was a Chipolata or a Cumberland sausage !!   Even Dimbleby joined in at the end saying Boris was off to eat his sausages !  Click 'read more' and check out the video link  for one of the few election highlights!

Sausage sales rocket in Korea !

After mentioning increased sales of sausage here in the UK, I was reliably informed that sausage sales have rocketed by 40% in South Korea.  After a  bout  of cold weather in February some smart alec discovered that the CJ Corporation's range of snack sausages have electrostatic properties similar to the human finger.

Sales of Sausages Rise in Recession

Recent figures confirm that sausage sales in the UK have risen again year on year even in the thick of the recession.  What is interesting though is that the premium end of the market is performing really well and confirms that sausages are now seen as a quality product and not just the cheap banger of 20 years ago.  Consumers are economising by choosing sausages rather than lamb chops or steak, but staying with  premium up-market sausages that will feed and satisfy the whole family.

It is only a few months now before the Football World Cup throws South Africa to the top of the world's attention.  Now is surely the time to start experimenting with South African Sausages to really impress your friends and customers when the BBQ season and world cup parties get into gear.

Internet Explorer 6 Support to be dropped by Google

Whilst I am no computer geek I thought many of our visitors might be interested in this development as if you are one of the 5% of folk who still use Internet Explorer Version 6 then upgrading to version 7 or 8 is now a must.

To prick or not to prick !

Here at Weschenfelders we spend our working lives producing sausage casings that are strong and without holes, so you can imagine the heart ache when you go to a BBQ and see friends pricking holes into the sausages before they are ceremoniously burnt on the grill !?  Pricking a good sausage just allows all the flavour to drain away, while leaving it whole allows the fat and juices to cook the sausage and will produce a much tastier and succulent sausage as a result. 

The Haggis Season

The Haggis Season is in full swing with parties all over the Scottish speaking world  celebrating the Poet Robbie Burns with a Haggis Supper and drinks ! I don't have any figures but judging from the number of Haggis Casings we have sold and the sheer interest in Haggis generally i reckon there is a big revival in this traditional dish ..... and in the fun that goes with Burns Night .
